I cook my kleftiko in a traditional clay pot but I also show you how you can make kleftiko in a roasting tray, Dutch oven, slow cooker or whatever you usually cook your roast in.

  1. Get Leg of mutton or Shoulder of Lamb
  2. Take big onion
  3. Take Lots of garlic
  4. Make ready a jar of pesto

My first experience of Lamb Kleftiko was in the Troodos mountains, but minus the bandits. Sitting on long communal tables with a steaming foil wrap being delivered to you in a bowl it's genius. Simple and easy to make in your slow cooker or Instant Pot. Mix all the ingredients in a bowl and then rub over your lamb shoulder.

Instructions to make Kleftico (in a slow cooker):
  1. First pre heat the slow cooker. Then cut the mutton into 4 or 5 big chunks and brown in a thick pan. Make sure there is bit of fat on the meat. Without some fat it wont be nice.
  2. When the meat is nice and brown add chopped garlic onion tomato and pesto and bring to the boil
  3. Put 4 or 5 sprigs of Rosemary into a pre heated slow cooker
  4. Then pour the meat and liquid on top. This way the Rosemary infuses lots of flavour into the meat as it cooks.
  5. Cook on low for HOURS. I did mine for 6 hours but longer is OK too
  6. At the end of the cooking time I had far too much liquid so I returned it to the pot and reduced the liquid on a high heat.
  7. I served with a potato & veg crush. You could do rice or roast spuds too if you want.

Season liberally with salt and pepper, transfer to a suitable lidded container and leave to marinate in the fridge overnight. Slow roast lamb; a slow-cooker version of the Greek classic. After this time, check the consistency of the juices. The newest way to slow cook is in a multi cooker that can also pressure cook (some even air fry!). Large cuts of meat, like pulled pork, cook well in a slow cooker because the tough muscle fibers break down over time, allowing the meat to get nice and tender.
