I am a big fan of this dish, it's easy to make and full of flavor. Stir-fry cubed chicken breast with mushrooms, spinach, eggplant, and soy sauce for a quick and easy main dish. Add the ginger, garlic and shallots and stir-fry until fragrant. Add the eggplant, stock, soy sauce, cooking wine, sugar and a pinch of salt.
