I love to make different versions of quiche because it's so quick and easy to prepare, especially when the quiche is crustless. Combine eggs, cheeses, butter, and chilies in large bowl. Pour half of egg mixture into each quiche dish. Top both dishes with half of shredded cheese and half of bacon.

  1. Preheat your oven to 350°F
  2. If you're using a frozen pre-made pie shell: take it out of the freezer, set it on a baking sheet at room temperature to thaw for 10 mins.
  3. In a bowl, combine eggs, milk and whisk together.
  4. Cut the avocado in half length-wise, take out the pit and gently cut the flesh into a grid of cubes 1" wide or smaller. Be careful not to cut through the outside skin/shell. Push the shell inside out to open the grid, scrape the cubes into the pie shell.
  5. Sprinkle the seasoning evenly over the avocado
  6. Pour the egg mixture over the avocado, being careful not to over fill the pie shell.
  7. Tip: Any extra liquid can be put into a ramikin and cooked as a mini quiche!
  8. Bake for 35-40 mins, or until a knife inserted near the center comes out clean.
  9. Let stand for 5-10 mins, serve with salsa!

Place the avocado halves on a baking tray and fill the cavities with the quiche mixture, being careful not to overfill. Halve, destone and peel the avocados.
