Chicken groundnut stew is, in various forms, common all over West Africa, and this is my version, inspired by my colleagues at UW. A friend of mine served it with the kale and carrots and peas added in. We both did variations but they were delicious over some rice with crusty bread. Seco de pollo is an easy recipe for stewed chicken with peas, carrots, and potatoes, cooked together in a delicious cilantro sauce.

  1. Fry the bacon in its own fat, then add the finely chopped onion and the crushed.
  2. Chop the peppers & tomatoes into smaller cubes, and simply add to the bacon-garlic-onion. Pour as much water as almost cover everything.

Seco de pollo is considered a "dry stew" because the chicken is first fried and then the sauce is cooked until thick making the stew less "wet" than other recipes. It helps enhance the flavor and makes the dish more visually appealing. These were the reasons why snap peas and red bell peppers were added. I enjoy eating it with a glass of lemonade. The leftovers can still be served later in the afternoon as pulutan.
