  1. Add the sweetcorn to a bowl. Season with pepper (and salt if making for adults). Add in the garlic granules, garam masala, ground coriander and chilli flakes plus the flour. Stir everything together until evenly distributed.
  2. Make a well in the centre of the sweetcorn and crack in the eggs. Beat them together then stir it through the sweetcorn mixture until everything is coated.
  3. Heat up a large skillet or frying pan and cover the base with a thin layer of oil. Heat up over a high/medium heat.
  4. Spoon a blob of batter into the frying pan and using the back of a spoon spread it out to make a circle. Do the same again until you have enough fritters to fill the pan so they have about a 2cm gap between them to move about. You'll probably have to cook the fritters in a couple of batches.
  5. Leave to fry on each side for several minutes until golden and the batter cooked right through to the centre.
  6. Place some kitchen towel on a plate and place the cooked fritters upon it once cooked to remove any excess oil. Enjoy!
